He’s mostly right.
The majority of soups are little more than appetizers. Despite how delicious they may taste, most soups are far better at piquing the palate than satisfying the stomach. “Man-sized” canned soups argue that their giant chunks of potatoes and meat offer more filling portions, but these varieties are usually nothing more than well-marketed salt bombs.
But there are a few soups that can satisfy without the affects of sodium-bloat. Take Portuguese Green Soup, called Caldo Verde. The soup contains just eight ingredients, yet the combination is as delicious as it is filling. Kale, sautéed with smoky chorizo sausage, provides the fiber and protein, while potatoes double up the hunger-killing effect.
The best part? The whole meal comes together in about 30 minutes or less—start to finish.
And, yes, a meal it is.

What you’ll need:
3 Tbsp olive oil, plus additional for serving
1 medium yellow onion, chopped
2 cloves garlic, chopped
2 cups peeled and thinly sliced Idaho potatoes
2 quarts chicken stock
6 oz chorizo sausage (about 2 links), cut into matchsticks
1 lb kale, washed, trimmed, and shredded
Salt and freshly ground black pepper, to taste
Squeeze of lemon
How to make it:
1. In a medium pot, heat 2 Tbsp olive oil over medium-high heat. Add the onions and garlic and sauté until translucent, about 3 minutes. Add the potatoes and the chicken stock and simmer until the potatoes are tender, about 5 minutes. Gently smash the potatoes in the pot.
2. In a large pan, heat the remaining olive oil over medium heat. Add the chorizo and cook until the fat renders, 2 to 3 minutes. Add the kale and sauté until it begins to wilt, about 5 minutes.
3. Add the kale to the soup and simmer until the kale is tender, about 7 minutes. Season with salt and pepper, to taste. Serve with a drizzle of olive oil and a squeeze of fresh lemon juice. Makes 4 servings.
